1 – Delicious Chicken Soup 

  • Preparation time: 10 minutes

Ingredients:

  • 1 lb chicken breasts, boneless and skinless 
  • 2 tbsp fresh basil, chopped
  • 1 ½ cup mozzarella cheese, shredded 
  • 2 garlic cloves, minced
  • 1 tbsp parmesan cheese, grated 
  • 2 tbsp dried basil
  • 2 cups chicken stock 
  • 28 oz tomatoes, diced 
  • ¼ tsp pepper
  • ½ tsp salt 

Directions:

1. Add chicken, parmesan cheese, dried basil, tomatoes, garlic, pepper, and salt to a crock pot and stir well to combine.

2. Four hours on low heat with a cover.

3. Add fresh basil and mozzarella cheese and stir well.

4. Cover again and cook for 30 more minutes or until the cheese is melted.

5. Remove chicken from the crock pot and shred using forks.

6. Return shredded chicken to the crock pot and stir to mix.

7. Serve and enjoy.

2 – Flavorful Broccoli Soup 

  • Preparation time: 10 minutes

Ingredients:

  • 20 oz broccoli florets
  • 4 oz cream cheese
  • 8 oz cheddar cheese, shredded 
  • ½ tsp paprika
  • ½ tsp ground mustard 
  • 3 cups chicken stock 
  • 2 garlic cloves, chopped 
  • 1 onion, diced
  • 1 cup carrots, shredded 
  • ¼ tsp baking soda 
  • ¼ tsp salt

Directions:

1. Add all ingredients except the cream cheese and cheddar cheese to a crock pot and stir well.

2. Cook on low for 4 hours with a cover on.

3. Using an immersion blender, smooth out the soup.

4. Stir in the cream cheese and cheddar cheese.

5. Cover and cook on low for 15 minutes longer.

6. Season with pepper and salt.

7. Serve and enjoy.

3 – Healthy Spinach Soup

Ingredients:

  • Three cups frozen spinach, chopped, thawed, and drained 
  • 8 oz cheddar cheese, shredded
  • 1 egg, lightly beaten
  • 10 oz can cream of chicken soup 
  • 8 oz cream cheese, softened

Directions:

1. Add spinach to a large bowl. Purée the spinach.

2. Add egg, chicken soup, cream cheese, and pepper to the spinach purée and mix well.

3. Transfer spinach mixture to a crock pot.

4. Cover and cook on low for Three hours.

5. Stir in cheddar cheese and serve.

4 – Healthy Chicken Kale Soup

Ingredients:

  • 2 lb chicken breasts, skinless and boneless 
  • ¼ cup fresh lemon juice
  • 5 oz baby kale
  • 32 oz chicken stock
  • ½ cup olive oil
  • 1 large onion, sliced
  • 14 oz chicken broth
  • 1 tbsp extra-virgin olive oil 
  • Salt

Directions:

1. Heat the extra-virgin olive oil in a pan over medium heat.

2. Season chicken with salt and place in the hot pan.

3. Cover pan and cook chicken for 15 minutes.

4. Remove chicken from the pan and shred it using forks.

5. Add shredded chicken to a crock pot.

6. Add sliced onion, olive oil, and broth to a blender and blend until combined.

7. Pour the blended mixture into the crock pot.

8. Add remaining ingredients to the crock pot and stir well.

9. Cover and cook on low for Six hours.

10. Stir well and serve.

5 – Broccoli Blue Cheese Soup 

  • Preparation time: 1 hour 
  • Cooking time: 1 hour 
  • Servings: 6 or 8 

Ingredients:

  • 1 cup crumbled blue cheese
  • ¼ cup heavy cream
  • 1 pound frozen broccoli, thawed
  • 1 ½ quarts chicken broth
  • 1 cup carb countdown dairy beverage 
  • 1 turnip, peeled and diced
  • 28 g butter
  • 160 g chopped onion 

Directions:

1. Sauté the onion in the butter over medium-low heat in a broad saucepan—you don’t want it to tan.

2. Until the onion is soft and transparent, add the chicken broth and the turnip to your pot. Bring the blend to a boil and let it cook for 20 to 30 minutes over medium to low heat.

3. Put in the thawed broccoli and cook for the next 20 minutes.

4. With a slotted spoon, spoon the vegetables out and put them in a mixer. A ladleful broth is added to the mix, and the blender runs until the vegetables are finely puréed. Shift the mixture back to your pot. Stir in the countdown carbohydrate, the heavy cream, and the blue cheese. 

5. Simmer for the next 5 to 10 minutes, stirring periodically, and serve.
